I stopped in my tracks last night when I came across this glorious-looking chickpea snack on Sweet Potato Chronicles‘ Insta-feed. I hopped over to its website to find the recipe and was all I don’t have time for that. (Which is ridiculous because it’s a really easy recipe.) And I didn’t have any all spice, either. But chickpeas are pretty inexpensive — even the organic ones I buy — so I thought I’d try a dumbed-down variation with just two ingredients aside from the chickpeas: maple syrup and cinnamon. I washed the wee legumes and let them dry for 10 minutes in a paper towel, then coated them in 2 tbsp of pure maple syrup (no Aunt Jemima here, please!) and about 1.5-2 tsp of cinnamon. I rubbed some coconut oil on a cookie sheet and spread them evenly, popping them into a pre-heated oven at 350 degrees for 40 minutes (tossing them to and fro every 10 minutes). The result was so good that all I got was this not-so-awesome smartphone image because they were gone in a flash. My 7 year old notoriously hates chickpeas, so I told him they were “Maple Syrup-y Cinnamon Pops” and he gobbled them up. What a perfect lunchbox snack, and a great treat if you’re on a weight-loss plan like I am but still want to indulge your sweet tooth with a little less guilt. But next time? I’m buying some all spice and trying the original recipe. Just in case.
